Zucchini Turkey Burgers with Herb Tahini

These Zucchini Turkey Burgers are great for meal prep or a nice summer BBQ. They’re juicy, lean and full of flavor.

Why you’ll love these Zucchini Turkey Burgers:

Perfect for meal prep- These burgers can be cooked at the beginning of the week for meal prep. I also like to make a double or triple batch of the burger mix and store it in the freezer to make weeknight dinners even easier.

A healthier spin- Don’t get me wrong, I love a good burger from time-to-time but I try to get a variety of meat and vegetables in my diet. The zucchini helps to keep these lean turkey burgers nice and moist. Sometimes I like to mix turkey with beef for extra flavor.

Easy to make- These burgers come together quickly with pantry staples like breadcrumbs, an onion and a few spices. And the herb tahini comes together in the blender in a few minutes while the burgers are cooking. You can either throw them on the grill or pan fry them.

Ingredients for Zucchini Turkey Burger:

Ground turkey- Turkey is a great lean meat option, however, you could easily substitute chicken or beef, or a mix of meats for these burgers.

Zucchini- Zucchini adds moisture to this lean burger mix, as well as flavor. I’m also a big fan of adding vegetables into whatever I can, making this an easy way to ensure your vegetable-hating kids are getting in some sneaky fiber and nutrients.

Breadcrumbs- Breadcrumbs help bind the mixture, make the texture of these burgers softer, and help retain moisture. Gluten free breadcrumbs, panko, or crackers (blended) can be used.

Red onion- Red onion are slightly sweeter and more mild than yellow onions so it’s great in this recipe since the onions aren’t caramelized. Yellow onion works too but will be a little sharper in taste.

Spices- I like cumin, garlic powder and oregano to flavor these turkey burgers but you can get creative and use whatever seasoning you like!

Herb Tahini Sauce- I love a good sauce/condiment with burgers and this Herb Tahini sauce hits that spot! It’s bright, garlicy and beautifully green.

Zucchini Turkey Burgers with Herb Tahini

Ingredients
  

  • 1 lb 93% lean ground turkey
  • 1 small zucchini, shredded
  • 1/4 cup red onion, minced (about 1/2 an onion)
  • 1/4 cup seasoned breadcrumbs or gluten-free breadcrumbs
  • 2 tsp kosher salt and fresh pepper
  • 1/2 tsp cumin
  • 1 Tbsp garlic powder
  • 1 tsp oregano
  • 1/2 cup tahini
  • 3-4 lemons, juiced
  • 1 bunch parsley
  • 1 bunch cilantro
  • 1 tbsp salt
  • 3-4 cloves garlic
  • 1-3 ice cubes, as needed

Instructions
 

  • In a mixing bowl add turkey, shredded zucchini, minced onion, breadcrumbs, salt, pepper, cumin, garlic powder and oregano and mix well. Shape into 5 even patties.
  • Heat grill or large skillet on medium high heat. If using the skillet, add 2 teaspoons of avocado oil. Cook the patties until cooked through, about 5 minutes per side.
  • While the patties are cooking, add all ingredients for the herb tahini to a blender and blend well. Taste and adjust seasoning and consistency as needed.

Notes

Note: Before cooking the 5 patties, cook a small amount of the mixture as a tester to taste seasoning. Adjust seasoning as needed before shaping 5 patties and cooking them.
