Roasted Miso Carrots

Easy to make- I love recipes where the oven does most of the work. You prep the carrots and toss it in the simple miso sauce then forget about them in the oven until they are caramelized and tender.

Healthy- Carrots are full of nutrients and can support a healthy diet. Beta carotene, which gives carrots their color, is a rich antioxidant. Miso, a fermented paste made from soybeans, is also very nutrient dense and promotes good bacteria in the gut.

Perfect for hosting– These flavorful carrots is a go-to side dishes for my dinner parties. They’re so simple to make, especially if I’m already using the oven for other dishes. They also reheat well so I can make them ahead of time or prep them with the sauce then roast them just before serving.

Ingredients:

Carrots- Carrots are both sweet and earthy. Roasting them brings out their natural sweetness and creates a depth of flavor that pairs really well with the savory miso and garlic.

Miso- Miso is a traditional Japanese seasoning made from fermented soybeans. It’s rich in probiotics and has a deep, umami flavor. I prefer white or yellow miso for this dish because it’s slightly milder and sweeter, but red miso will also work.

Garlic- I am a garlic lover because I absolutely love the flavor, it’s just an added bonus for me that is has so many health benefits. Garlic is said to be anti-inflammatory, high in antioxidants and immune boosting.

Apple Cider Vinegar- Apple cider vinegar is tart and slightly sweet, which works really well with the miso carrots. The acidity helps to cut through the saltiness of the miso. Apple cider vinegar is high in acetic acid since it is fermented and is also full of probiotics and antioxidants,

Avocado Oil- I prefer cooking with avocado oil over most other type of oils since it has a high smoking point.

Roasted Miso Carrots

Ingredients
  

  • 1 lb carrots
  • 2 tbsp miso paste (white or yellow miso)
  • 3-4 cloves garlic, minced
  • 1 tbsp avocado oil
  • 1 tbsp apple cider vinegar
  • 1 tsp salt
  • 1/2 tsp pepper

Instructions
 

  • Preheat oven to 375°F.
  • Peel and trim the carrots. Cut carrots crosswise into smaller sections, each about 2 to 3 inches long. The slice each section into strips about 1/4 inch thick.
  • In a medium sized mixing bowl, mix miso, garlic, oil, vinegar, salt and pepper well. Then toss the carrot slices and mix until they are fully coated.
  • Place seasoned carrots on a parchment lined sheet tray or in a large oven safe dish. Roast until tender, for about 25 minutes.
