Peel and trim the carrots. Cut carrots crosswise into smaller sections, each about 2 to 3 inches long. The slice each section into strips about 1/4 inch thick.
In a medium sized mixing bowl, mix miso, garlic, oil, vinegar, salt and pepper well. Then toss the carrot slices and mix until they are fully coated.
Place seasoned carrots on a parchment lined sheet tray or in a large oven safe dish. Roast until tender, for about 25 minutes.
