Easy to make- These stewed balsamic strawberries come together in under 20 minutes. Stewing them in balsamic vinegar gives the strawberries such a depth of flavor. Ingredients:
Strawberries- Strawberries are juicy, sweet and tangy in addition to being full or nutrients and health benefits. The great thing about this recipe is that the strawberries don’t have to be perfectly ripe and in season. I advocate for shopping seasonally as much as possible but in California we grow berries year-round even though peak season is during summer. This recipe is always a great way to use strawberries that may be getting a little soft.
Balsamic vinegar- Balsamic vinegar is made from grapes and tends to be sweeter than other type of vinegars. It’s fruity, acidic and sweet with a depth of flavor from wood barreling. I’ve always liked balsamic vinegar but admire even more after touring one of the oldest vineyards in Modena, Italy years ago.
Sugar- Sugar helps to thicken and caramelize the balsamic vinegar before the strawberries are added. You could also try honey, maple syrup or coconut sugar.

Balsamic Strawberries
Ingredients
- 1/2 cup balsamic vinegar
- 1 tbsp sugar
- 1 pint strawberries
Instructions
- Wash and prepare strawberries by removing the greens and cutting them in quarters.
- Simmer balsamic vinegar and sugar in a small sauce pan over medium-high heat until thickened, about 15 minutes.
- Then add strawberries to the pot and mix before transferring to a a serving dish. Serve warm or cooled.
